Restaurant Tres Special


Summer menu, from July 27th:
From 830 euros for 2 persons, 18 courses all-in

With no less than 18 courses with only Dutch ingredients, Tres offers you a very special culinary experience for gourmets.

Michael van der Kroft and Emy Koster came up with the exclusive dinner concept after years of traveling and working at a high level. Their eye fell on the beautiful, raw old jazz cellar of the Entrepotgebouw, located just around the corner from Hotel Pincoffs. 

This package can be arranged with just one phone call or an e-mail. This package is on request, because we want to check the availability in the restaurant.

Restaurant open: from Friday to Tuesday

New: On Saturdays and Sundays it is also possible to use the same arrangement for lunch.
This is possible in the extended version with 18 courses, such as with dinner, or in a slightly shorter version with 13 courses.

For overnight stays from Saturday to Sunday, a surcharge of a total of 20 euros applies for 2 persons.

Van der Kroft is now one of the most talked about chefs in the Netherlands. With his dinner he wants to tell a story, in 18 chapters. He hopes that every guest enjoys it so much that all daily thoughts are forgotten for a while. Each dish is made with only Dutch ingredients, often fermented. ,,Complex without being complicated'', the chef tells the influential e-magazine Food Inspiration. According to the chef, a dish is never finished. ,,There is never an end point. There is a basic principle: it just has to be very tasty.''

Van der Kroft experiments more than most colleagues. He doesn't shy away from working with unpopular ingredients, if he thinks this benefits the taste. For example, he used Dutch ants in his dishes. The ants provide a lot of sweets. He picks or catches most products in the wild with his team. Everyone has their own specialty. He combines these qualities in an inspiring way.

Minimalist decor
They opted for a minimalist design, a serene place where all their ideas and experiences merge. Nothing should distract from the culinary adventure. 

Only 12 place settings per evening
Only 12 place settings are available per evening. The chefs tell the story of the dishes themselves. ,,We work purely with Dutch products, but we do apply techniques from all over the world'', says chef Van der Kroft. ,,That way we can still create international flavors''.
Tres' open kitchen works with canning, garums, miso, koji and fermentation.

    Dinner Package Extensive for 2 persons: 830 euros, including multi-course dinner, accompanying wines, water, digestif, overnight stay and breakfast. From July 27th: 799 euros.
  • Lunch Package Extended
    All-in for 2 persons: 830 euros, including multi-course lunch, accompanying wines, water, digestif, overnight stay and breakfast. From July 27th: 799 euros.

  • Lunch Package Compact
    All-in for 2 people: costs 700 euros, including a shortened lunch version with 13 courses, accompanying wines, water, digestif, overnight stay and breakfast.
    For overnight stays from Saturday to Sunday, a surcharge of 20 euros in total for 2 people applies. From July 27th: 680 euros.
